Great Barrier Feast with Guillaume Brahimi Posted by Reef Magazine - 8 July 2012 Renowned Sydney chef Guillaume Brahimi, of Guillaume at Bennelong, joined us at qualia in July 2012 to headline our Great Barrier Feast event, bringing contemporary Australian cuisine with a classical French influence to the Whitsundays. On the Friday evening, qualia‘s Executive Chef, Alastair Waddell, presented an opening night welcome dinner with Guillaume, who was in fact once his mentor (prior to qualia, Waddell was Chef de Partie at the two-hatted Bistro Guillaume in Melbourne!), with wines paired and discussed by celebrated wine expert James Halliday. Two in-depth masterclasses were held the following day, leading up to Brahimi’s showpiece degustation dinner. Esteemed restaurant critic Simon Thomsen was on-hand throughout the weekend as emcee for the event. Honoured to be taking part in our Great Barrier Feast event series, Brahimi said, “It is a real privilege to be able to celebrate the best of Australian cuisine in such a stunning location and swap my kitchen view of the Sydney Harbour for the Whitsundays Coral Sea.
